This field of studies covers research, development and commercialization of products and processes which are halal compliant for the food, pharmaceutical and cosmetic industries. The areas covered in this study programme are development of halal products such as protein-based hydrolysates, halal enzymes and meat and meat-based products. The development of halal lipid-based materials will cover halal emulsifiers, fat and oil substitutes and halal specialty fats, while the development of processing aids are alternatives to using porcine enzymes and replacers to non-halal gelatins and other non-halal protein hydrolysates. Examples of products to be developed in this area of study will also include halal food ingredients, halal confectionaries and bakeries, halal cosmetic ingredients, halal pharmaceutical ingredients, halal thickening agents and stabilizers, halal colours and pigments, halal personal care products, halal pharmaceuticals, halal fragrance, halal medicine and vaccines, halal skins, halal packaging, halal sensory, halal dairy products processing, fermented products and ethanol production technology.

The applicant who has insufficient academic qualification can be admitted into the programme subjected to any other requirement specified by the Faculty/Institute.
An applicant from a local public university who is in the final semester of his undergraduate study programme may be considered for provisional admission provided that his latest CGPA or its equivalent academic result satisfies the graduate programme admission requirements.
For applicants with one of the following
550 for the TOEFL Paper-based Test (Academic Version); or
Band 6.0 for IELTS (Academic Training); or
79-80 for TOEFL Internet-based Test (Academic Version); or
Level 109 for CIEP at ELS Language Centre; or
Any English Language Test which is equivalent to B2 in Common European Framework of Reference for Languages (CEFR)
