You will master techniques for producing, finishing, and presenting a wide range of basic and contemporary bakery items.Delivered over one semester, with full and part-time options available, you will learn in a real-life kitchen environment at our purpose-built facilities from industry-expert tutors and work together in a team to produce bakery items for sale.As a full-time student, you will train at our Rotokauri Campus three days a week. Topics include:Learn the use of different flour types, sugar varieties, and yeastUnderstand why ingredients are combined in exact quantities to produce productsApply food health and safety, and hygiene processes and proceduresProduce a range of yeast-raised classics, including baguettes, bagels, pizza bread, and plaited loavesCreate melt-in-your-mouth biscuits and cookiesDevelop sweet and short pastry skillsMaster traditional cakes, lamingtons, Victoria sponge, berry friands, and a range of slices
